Ingredients
60g plain flour
pinch of salt
150ml of milk
1 large egg
1 teaspoon of chopped fresh thyme
4 tablespoon of sunflower oil
4 good quality sausages
Method
Pre-heat the oven to 230°C/450°F.
Sift the flour and a pinch of salt into a bowl and gradually whisk in
the milk and egg to form a smooth batter. Add the thyme and transfer
to a jug.
Pour the oil into a 1kg loaf tin and
place in the oven for about 5 minutes until pipping hot. Add the
sausages, being careful as you do it as the oil may spit, and bake
for 10 minutes until the sausages are starting to brown.
Remove the tin from the oven and
carefully pour in the batter. Put the tin back into the oven for
about 20 minutes until the batter is risen and set.
