Christmas Dinner Radio Package

The Smith Special All Day Omelette


Ingredients

Ham
Mushrooms
Tomato
2 spring onions
3 eggs
dash of milk
olive oil
cheese
toast 


Method

1. Chop up the ham, mushrooms, tomato and spring onions.
2. Heat up the frying pan to 4 on the stove, add olive oil.
3. Heat up the grill. 
4. Add milk, eggs and black pepper to a bowl and whisk.
5. Throw in the ingredients to the frying pan when warm, mix and cook for 3-4 minutes. 


6. Add the eggs to the pan, and stir it around to prevent sticking.


7. Add cheese and paprika. 


8. Put the pan under the grill to melt the cheese. 
9. Wait until golden brown and serve with toast and tea.


Ginger, Chilli and Lime Chicken Escalopes with Sauteed Peppers, Mushrooms and Onions with Broccoli potato wedges.

Ingredients

Onion and Peppers
Mushrooms
Olive Oil
Chicken
Broccoli
Potato Wedges
Black Pepper



Method

1. Peel and chop the vegetables and place into a small frying pan and cook until browned.
2. Trim the broccoli and boil in pot until cooked.
3. Cook the chicken for 35 minutes at 200 degrees celcius in the oven.
4. Cook potato wedges in the oven for 45 minutes at 180 degrees celcius.

Meal 3: Toad in the Hole



Ingredients

60g plain flour
pinch of salt
150ml of milk
1 large egg
1 teaspoon of chopped fresh thyme
4 tablespoon of sunflower oil
4 good quality sausages

Method

Pre-heat the oven to 230°C/450°F. Sift the flour and a pinch of salt into a bowl and gradually whisk in the milk and egg to form a smooth batter. Add the thyme and transfer to a jug.
Pour the oil into a 1kg loaf tin and place in the oven for about 5 minutes until pipping hot. Add the sausages, being careful as you do it as the oil may spit, and bake for 10 minutes until the sausages are starting to brown.
Remove the tin from the oven and carefully pour in the batter. Put the tin back into the oven for about 20 minutes until the batter is risen and set.

Meal 2: Chicken Korma and Fried Rice


Ingredients

3 Chicken Fillets
Chilli Oil
4 Garlic Cloves
1 Chilli
Anila's Spicy Korma Concentrated Curry Sauce
Coriander
Special Fried Rice

Method

  • Dice 3 Chicken Fillets into small chunks
  • Fry till golden in some chilli oil in sauce pan
  • Add 4 cloves of garlic and 1 chilli
  • Stir and add Spicy Korma Concentrated Curry Sauce
  • Simmer for 30mins
  • Add Chopped Coriander
  • Serve on a dish with special fried rice

Meal 1: Spaghetti Bolognese

For the first post I decided to make my favourite meal, spaghetti bolognese.

Ingredients


2 onions
5 cloves of garlic
2 small carrots
2 spring onions
1 oxo cube
1 tin of tomatoes
soya sauce
tomato ketchup
tomato puree
roasted garlic sauce
beef stock
white pepper
onion granules
garlic powder
worchestire sauce
ground pepper
oregano
mince
olive oil
spaghetti

Directions

To start get a large pot, add a good splash of olive oil and set ring to heat four. Add in peeled and chopped onions, five cloves of garlic, chopped up spring onion and diced carrots. Cook until the onions are translucent then add salt. Break up and add the mince to the pot and stir then add half a teaspoon of oregano, a dash of white pepper, one teaspoon of onion granules and garlic powder, two teaspoons of roasted garlic sauce and beef stock, an oxo cube, a small splash of soya sauce and worchestire sauce, a tablespoon of tomato ketchup, four tablespoons of tomato puree, one tin of chopped tomatoes, ground pepper and a small bit of water.

 Put the cover on, turn the heat down to three then let it simmer for half an hour.


Now for the spaghetti, get a pot, half full with water and add some salt and olive oil. Place it on heat five for about ten minutes then put the spaghetti in. Wait until it is soft then place the it into the pot gently with a spaghetti spoon and leave for ten minutes.

When its all cooked, feel free to jazz it up as you so wish. I have added some freshly grated red medium and mozzarella cheese as well as a sprinkling of parmesan cheese along with a few pieces of herb and mozzarella focaccia on the side to soak up the sauce.


And there you have it, a delicious meal for any occasion.

A Quick Introduction

Hello, my name is Gavin Johnston-Smith, I'm 22, I'm studying media production in Liberties College and the only thing I know how to make is a rasher sandwich. As the name of the blog suggests, the kitchen is a conundrum to me. The pots and pans that lie around are mere ornaments than utensils.
This is exactly why I have decided to start a food blog, so that I can learn the ways of the kitchen and make delicious meals, while all the time sharing my progress with you, the readers. I'm hoping on making a variety of different dishes and regularly posting my experience's of creating them, along with a few audio packages and print articles.
